Alternatively, enjoy an oil-based version of angel hair showcasing plump, sweet Venus Clams, with texture and flavour beautifully enhanced by crispy sakura ebi and umami-intense shio kombu. Or opt for Mushroom & Basil linguine, a vegetarian-friendly option that is tossed in homemade basil pistou, with generous servings of shimeji and button mushrooms.

For proteins, train your sight on tender Lamb Rack that is sous vide to a medium rare, paired with earthy Kale and a sweet, savoury red wine sauce. The smooth, velvety and delicate flakes of a splendid Black Cod tempts with wild rice and crispy Pistachio crust. Filet Mignon, prepared with shiraz sauce and wild forest mushroom ragout is another recommended highlight not to be missed.

Gourmands who prefer an unconventional and adventurous journey can consider Feed Me! This dish is a spin-off from Chef’s freshest pickings of the day from the market.

The explorer with a sweet tooth is also in for a thrill with Kopi ‘O’, a cross-breed between classic Tiramisu and chef’s interpretation of our local coffee. Mocha cake, coffee ice-cream and milk sauce are served with house-made butter sugared toast. For lighter flavours, the Meyer Lemon Trifle showcases a Victorian-style sponge cake that is refreshingly infused with aromatic thyme.
